Peanut Butter and Jam Bread Pudding

Ingredients:

4 tbsp unsalted butter
2/3 cup peanut butter
1 3/4 cups milk at room temperature
2 egg yolks
2 whole eggs
1/3 cup sugar
2 tsp vanilla extract
6 cups cubed egg bread
2/3 cup raspberry other other fruit jam
turbinado sugar, for sprinkling

Method:

Preheat oven to 350° F. Melt butter and brush pan with half of it. Add peanut butter to remaining melted butter and heat over low until fluid. Remove from heat and whisk in milk, then whisk in egg yolks, eggs, sugar and vanilla. Toss mixture with diced bread and let sit 10 minutes. Spoon mixture into preapred pan and dollop jam over bread, pressing in slightly to incorporate just a touch. Sprinkle with turbinado sugar. Place pan in a larger dish and fill it with an inch of hot tap water. Bake for about 50 minutes, until golden on top and set. Let pudding sit for at least 30 minutes before serving.

Pudding can be served warm or chilled.

Grilled Lobster A la Pnut



Marinade lobster dengan sparkling grape juice (to susbtantiate white wine). Add parsley, thyme, fish sauce, tarragon, oregano, black pepper. Lepas tu sebelum bakar, tumis butter and garlic (2 ulas), yellow onion sikit + parsley. Lepas sebati, tuang kat atas lobster and bakar.

Potato - mek sure diced into small pieces
Egg
Cheese on top - if you like

Goreng atas api yang kecil. Tutup la frying pan tu.

Lemon Cake with curd and frosting



Ingredients :

2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1/2 cup butter
1 1/4 cups white sugar
3 eggs
1 teaspoon vanilla extract
1 cup milk

1 tablespoon grated lemon zest
1/2 cup fresh lemon juice
1 tablespoon cornstarch
6 tablespoons butter
3/4 cup white sugar
4 egg yolks, beaten

4 cups confectioners' sugar
1/2 cup butter, softened
2 tablespoons fresh lemon juice
1 teaspoon grated lemon zest
2 tablespoons milk

Directions :

Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8 inch round pans. Mix together the flour, baking powder and salt. Set aside.

In a large bowl, cream together the butter and sugar until light and fluffy, about 5 minutes. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the milk, mixing just until incorporated.

Pour batter into prepared pans. Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool in pans on wire racks for 10 minutes. Then invert onto wire racks to cool completely.

To make lemon curd :
In medium saucepan, mix together 1 tablespoon lemon zest, 1/2 cup lemon juice and 1 tablespoon cornstarch until smooth. Mix in 6 tablespoons butter and 3/4 cup sugar, and bring mixture to boil over medium heat. Boil for one minute, stirring constantly. In small bowl, with a wire whisk, beat egg yolks until smooth.

Whisk in a small amount of the hot lemon mixture. Pour the egg mixture into the sauce pan, beating the hot lemon mixture rapidly. Reduce heat to low; cook, stirring constantly, 5 minutes, or until thick (not to boil).

Pour mixture into medium bowl. Press plastic wrap onto surface to keep skin from forming as it cools. Cool to room temperature. Refrigerate 3 hours.

To make frosting:
In large bowl, beat confectioners' sugar, 1/2 cup butter, 2 tablespoons lemon juice and 1 teaspoon lemon zest until smooth. Beat in milk, and increase speed and continue to beat until light and fluffy.

Mini Personal Pizza



Spread some tomato paste (spaghetti sos atau tomato sos je) on your arabic bread. Put toppings of your choice ie pineapple, capsicum, tomato, salami, minced meat, chilli and mozarella cheese. Put in microwave oven for a few minutes. Siap!

Roti Jala Aluya



Ingredients :
1 tolo
2 to 3 tblsp of coconut milk powder ]
about 1 cup of low fat milk ] -papandai la agak supaya tak pekat atau terlebih cair
about 1 cup of flour ]
a pinch of soda bikarbonat/baking powder (I oso dono apa motif benda ni, taruk je la... optional ekceli)
pinch of salt

Put all in blender. Pastu blend la... sebelum dijalakan di frying pan anda dan kemudian dimakan bersama kari daging mahupun ayam atau pun bersama Kaya Yeo's yang sedap. Nom nom nom.

6 batang serai ]
1 jari lengkuas ] di kisar halus
10 ulas bawang putih]

1/2 cwn minyak utk menumis

serbuk perisa jika perlu

lada kering - rendam dalam air panas sehingga kembang, tos dan kisar tanpa air dengan sedikit garam

Fish - whatever fish you like. I'm using milk fish.
Lemon - to be squeezed for the juice and sliced.

Very simple ingredients, however nak simpan santan dalam daun tu memang kena expert lah. Kalau tak, sure tumpah-ruah. So, I'm guessing if I were to bikin kuih ni (that is after I got my periyuk kukus chap gajah, of cos), I'm gonna use the small plastic containers. And in order for me to get the daun pisang aroma, well... lapik je la selai dalam bekas pastit tu. Boleh je kan?
